Chef John Coffey is the award-winning owner and head chef of Thyme Restaurant in Athlone, County Westmeath, established in 2007 with his wife, Tara. Originally from Kinnegad, Coffey began his culinary journey at Harry’s of Kinnegad, then one of the busiest restaurants in Ireland, where he first learned the value of community food networks that linked local farmers and producers—a principle that continues to define his cooking today.
At Thyme, Coffey has developed a reputation for modern Irish cuisine rooted in local, seasonal produce and influenced by classical French and Italian techniques. His menus highlight ingredients from Westmeath and surrounding areas, often showcasing game, artisan meats, and regional vegetables. Coffey’s approach has been praised by national critics, with The Sunday Business Post calling him “the best Irish chef you’ve never heard of,” and Sally and John McKenna dubbing him “the Midlands’ maestro.”
Thyme has consistently earned acclaim, including six consecutive Michelin Bib Gourmand awards (2019–2025), recognition in The Sunday Times list of Ireland’s 100 Best Restaurants (2025), and multiple titles at the Irish Restaurant Awards, such as Best Chef and Best Restaurant in Westmeath (2025). Coffey is also a member of Euro-Toques Ireland, underscoring his commitment to culinary excellence and sustainability.
